The Chef’s Table is a business
that truly did come from humble beginnings in that its success could have never
been predicted at its origin. The truth is, opening a catering company was
never the intention of Mark Ellis when he quit his job as Executive Chef of a
club on the Cape in 2001. Mark and Julie had just had their second child and the
demanding schedule of his job prompted him to make the career move that would eventually
prove to be the very beginning of The Chef’s Table.
Mark began work as a private chef
for a family in Boston and soon began catering dinner parties for the family.
Mark’s talent was not lost on his guests; his work was increasing in popularity
among the attendees of the dinner parties and he began to pick up more work for
a growing number of clients. The work was mostly in-house cooking and dinner or
cocktail parties. In the Ellis’ home, Mark kept a table dedicated to his work
that held dried goods, oils, herbs and spices, what he describes as “mis en
place”- meaning “everything in place”, for everyone out there who may be
unfamiliar with the industry. Julie
dubbed the workspace “The Chef’s Table”, and within a year and a half, Mark’s
chef’s table was no longer sufficient enough to sustain their rapidly growing
business. Mark and Julie soon moved into a new facility, formally opened “The
Chef’s Table” and the company headquarters still remains at the same site
today.
In addition to their successful
catering business, The Chef’s Table also
began managing, staffing, and serving their delicious food at the
Scituate Harbor Yacht Club in their hometown Scituate, MA. Every summer the
team at The Chef’s Table divides their time between serving their catering
clients out of Pembroke as well as their guests at the SHYC snack bar and
dining room.
Although Mark had said that
catering was never part of the initial plan, he did say that in his thirteen
years as Executive Chef of The Chef’s Table, there has yet to be a boring
moment. Mark, Julie and the rest of the team at The Chef’s Table are a unique
group delivering not only food, but a higher quality of service and a personal touch
